High-throughput, real-time, multi-analysis instrumental technologies are now being applied to the wine industry for assessing potential grape quality and characterizing juice and wine composition as an aid to production decisions. There is some evidence that NIR/FTIR systems will allow the payment of quality based on grape characteristics other than Brix and MOG content. These systems are widely used in the milk and grain industries.
