New technology used in winemaking includes innovations that are not widely adopted in the wine community. This session covers a range of topics and technology to benefit wine production, including rapid must chilling with liquid CO2, a new technique for the detection of Brettanomyces/Dekkera in wine, rapid quantitative testing for Botrytis in grape juice and wines, and crossflow filtration.
