Sustainability in the competitive global market requires each business to maximize efficient use of resources and minimize inputs while maintaining quality. Based on a model developed by WINEQUEST, and used by Beringer Blass Wine Estates, the session will focus on the cost from grape to bottle all inputs and the importance of understanding the build-up of cost of goods to effectively meet consumer demand. The session will also look at matching the cost, quantity and quality of fruit to the price point targeted, including the cost of sustainable agriculture. Then US global competitiveness will be evaluated by running scenarios with cost profiles from Italy and Australia through the model.
