This session will begin with a blind tasting of wines to be ranked strictly on preference by attendees. Speakers will address the physiology and chemistry of the ripening process in grapes at the various stages of sugar accumulation. Included will be an explanation of the trials from which the wines were tasted. Results of the audience ranking will be announced.
